Top Manchester apprentice chefs battle it out
Trafford College’s award-winning training kitchens played host to some of Greater Manchester’s best apprentices, all battling it out for first place in an exclusive restaurant group competition.
Top chefs, including College apprentice Michael Mottershead, were given just under two hours to prepare a three course menu, which had to feature duck as a main.
Michael produced a mouth-watering meal of goat’s cheese and tomato salad followed by duck leg and black pudding spicy sausage with duck breast and red wine plum and apple sauce, then a dessert of ginger and almond pancetta in pastry with candied vanilla, but was pipped at the post by colleague Michael Moroney who won first prize.
Michael Mottershead, who works at Gorilla bar on Whitworth Street in Manchester, said: “The competition was great. It is all a learning curve. I was trying things I had never tried before like making sausage with just a piping bag!
“My dessert was by far the best, but all credit to the winner, another Michael, who just beat me on technical ability.”
We Are Mission Mars comprises of popular eateries Albert’s Schloss and Rudy’s, pubs The Elephant, Liberty Tavern, The Viking, Trof NQ and live club venues Gorilla, The Albert Hall and the Deaf Institute.
Trafford College Head of Hospitality and Catering, Matthew Shaw, said: “Once again, we have welcomed some of the best apprentices in the region to compete using our top quality facilities. Our first-class teaching and state-of-the-art kitchen facilities are what keep bringing students to Trafford College to study time and again.”
