Course Overview
Students learn through a combination of real life working environments, theory and skills classes.
Units include:
- Effective teamwork
- Maintain food safety, storing, preparing and cooking food
- Cook and finish basic fish dishes
- Cook and finish basic meat dishes
- Cook and finish basic poultry dishes
- Cook and finish basic vegetable dishes
- Prepare, cook and finish basic soups
- Preparation and cooking of bread and dough products
Trafford College's award winning Aspire Restaurant has been nationally recognised by the AA and is open to the public for lunch and dinner and offers a realistic working environment. There are 4 well equipped industry standard kitchens for training purposes and a demonstration theatre kitchen for presentations and theory workshops.
On successful completion you will achieve:
Level 2 Diploma in Professional Chef
Food Safety in Catering CIEH Level 2 Award
Course Requirements
The course is also open to students who have completed a Level 1 qualification or those who have acquired the necessary skills through working in the industry.
To prepare you for a higher level qualification, employment or university you might be required to study a GCSE qualification in maths and English.

Course Assessment
Assessment is continuous by observation of practical skills, development of a portfolio and multiple-choice questioning to test underpinning knowledge.
