Course Overview
Students learn through a combination of real-life working environments, theory and skills classes.
Units include:
- Introduction to the hospitality and catering industry
- Food safety in catering
- Health and safety awareness for hospitality
- Introduction to healthier foods and special diets
- Introduction to personal work place skills
- Prepare and cook food
- Front of house service
Trafford College's award winning Aspire Restaurant has been nationally recognised by the AA and is open to the public for lunch and dinner and offers a realistic working environment.
There are 4 well equipped industry standard kitchens for training purposes and a demonstration theatre kitchen for presentations and theory workshops.
A well-stocked library and computer workshop can also be accessed by all students.
Industrial and educational visits are also included in this study programme.
Course Requirements
Students will develop the foundations in food preparation and cooking and food service. This is based on the fact that core skills are developed at Level 1 allowing for progression onto a higher level course. Students will have access to the main kitchen, pastry and restaurant.
To prepare you for a higher level qualification, employment or university you might be required to study a GCSE qualification in maths and English.
