Course Overview

The aim of this course is to provide learners with a basic understanding of how to prepare and cook fish and shellfish dishes.

The course will focus on the production of dishes, using suitable tools and equipment enabling learners to demonstrate the process of preparing, cooking and producing finished dishes while using a range of commodities and ingredients.

This course will provide learners with an opportunity to learn the skills needed for basic fish and shellfish preparation and cooking, whilst exploring individuality and flair.

The course is split into units covering the specialist areas:
Week 1- Flat Fish Prep and Classic Cuts (Skinning, filleting)
Week 2- Round Fish Prep and Classic Cuts (de-scaling, gutting, filleting)
Week 3- Fish and Shellfish Cooking Methods
Week 4- Finishing and Plating Fish and Shellfish Dishes

Recipes, methods and presentation styles will mirror classic and modern Michelin and Rosette industry trends.

Course Requirements

Course Assessment

Demonstrate the correct use of tools and equipment to prepare and cook fish dishes
Prepare and cook fish according to dish specifications
Demonstrate control of the cooking process to obtain the required quality
Evaluate finished dishes
Demonstrate safe and hygienic practices

On successful completion you will achieve a Trafford College Certificate in Fish and shellfish Preparation and Cooking.
